Favorite Meal of the Week: Panzanella Salad

I only took one picture of this meal because my hubby and I were WAY too busy eating to worry about pictures!

It looks a little messy, but was so delicious.

The purple that is all over everything was actually purple potatoes that I apparently boiled to death. They tasted good, no matter how they look!

Ingredients are:


  • ½ Pound Purple Potatoes
  • 1 Small Baguette
  • 3 Ounces Baby Kale
  • 1 Apple
  • 1 Red Onion
  • 1 Bunch Mint
  • 3 Tablespoons Pecans
  • 1 Tablespoon Apple Cider Vinegar
  • ½ Cup Crumbled Blue Cheese
  • ¼ Cup Sour Cream

I did not have to change one thing to this! Although, I do not love that Blue Apron loves to add in Blue Cheese, so normally I switch to a cheese that I like more, like Feta. In this case, however, maybe because of the apple, the blue cheese went well. I loved the toasted baguette!

We even had leftovers, so we had this for lunch and the baguette (surprisingly) was still crunchy!

Definitely one of my new favorites!
