Firstly! Just like judging a book by its cover, it’s so fabulous to have a cook book with such great looking pictures! My mouth was watering before I even know what I was about to get myself into! And at pictures of veggies too!

Why veggies

The main reason I wanted this was because I noticed that my hubby and I eat veggies very rarely. It’s not even as if we do not like veggies. We love salads and enjoy trying different veggies now and again. Sadly we just do not add enough vegetables into our meals.

Green facts

There is a lovely fact file on some of the vegetables that are found in the book. These files also have the pages of the meals that they are in. Quite handy! My favorite, although I plan to try them all, was the avocado. The meals that the avocado is included in are:

  • Breakfast Sandwich with Avocado and Arugula
  • Raw Summer Soup
  • Mango, Avocado, and Cucumber Summer Rolls
  • Deconstructed Sushi Bowl
  • Chocolate Hazelnut Avocado Torte

YUMS! I’m dying to try the Deconstructed Sushi Bowl and Mango, Avocado, Cucumber Summer rolls.  And with my new knowledge of the Dandelion, I may the only gardener in my town that wants these babies to grow!

This cookbook is divided exactly as I would expect a cookbook to be. Smoothies, appetizers, soups and salads, entrees, and desserts.

I have yet to jump into the juicing idea but I enjoy the idea of smoothies. There are many, many different ideas for smoothies in this. I especially enjoyed the green juice without a juicer! The ingredients are easy to obtain and it comes out a lovely color and is delicious! And a fabulous and very easy recipe for pickles! For some reason I never have sandwich pickles but I always have cucumbers! So easy to do and delicious!

Try something new

Dandelion, fennel, and chayote anyone? I didn’t even know what a chayote was although I realized after searching for them that I’ve seen them many times in the grocery store, just steered clear. There’s a chayote ceviche recipe in this which is to die for! If you enjoy salsa this is a great variation, and healthy too!

In short: There is something in here for even the pickiest eaters! A fabulous mix of recipes and ideas, new and old (bubble and squeak)!
